I adore paella and seafood!!! I tried it in a restaurant and now I can cook it myself, may be a bit differ from the original, but also delicious!!! Here the approximate recipe of paella:
1. Chop up a red onion, four cloves of garlic, and two tablespoons of parsely, and then dice two green peppers.
2. Use a box grater to to puree two ripe tomatoes, after removing the skin.
3. Peel eighteen large shrimps. Cut two squid tubes into rings, and prepare twelve mussels. Cover and refrigerate these.
4. This part is essential. Preparing the sofrito sauce. heat two table spoons of olive oil in the pan that you are using at a medium heat, and then cook the chooped red onion, three of the cloves of garlic, and the parsely for eight minutes. During this time, occaisionally stir the sauce. Add the tomatoes and also add two teaspoons of paprika, and cook until the liquid from the tomatoes has evoporated.
5. While the sauce is cooking, put the mussels in simmering water. Steam at a low heat for five minutes, and themussels will open.
6. Add a tablespoon of olive oil to the paella pan, and cook for 1.5 minutes. Add the squid, with salt and black pepper, and cook for 1.5 minutes. Then remove the squid and mix it with salt and black pepper.
7. Add the sofrito sauce to the pan, along with 1.5 cups of medium-grain rice, and cook for a minute while stirring. 8. Add three cups of chicken or fish stock, 1.5 teaspoons sea salt, 1/2 teaspoon black pepper, and a pinch of saffron threads. Cook for ten minutes without stirring. 9. Lower the heat to a gentle simmer and cook for 15 minutes. Then turn up the heat again for a minute until you can smell the rice toasting. Remove the paella pan from the heat. 10. Add the seafood and cover for five minutes. 11. Enjoy! Tip: you may add as much or as little of the seafood as you want. also, instead of medium grain rice, you can use Bombay rice.
