Great question! This is something most native speakers aren't even clear about. In the example you point to, "were" is used because it follows "if," making the sentence subjunctive. Without "if," you would use "was," like in the famous song lyric, "I wish I was a little bit taller…" 

Truthfully though, in day to day English, either "was" or "were" would be acceptable in the example. So don't worry too much about this issue.
